The Hotel Cualbu is in Fonni, in the heart of the Barbagia, the most ancient area of Sardinia and in whose culinary tradition one finds evidence of the traces left by history.The customs and knowledge of the farming and shepherd communities have been preserved up to the present day and, just as in the past, our tables have pane carasauwith which to accompany the richly-flavoured cold meats and delicious cheeses directly produced by our farm.
Skilful preparation and slow cooking over burning coals make Sardinian piglet and lamb, flavoured with the local aromatic herbs- rosemary, wild thyme and bay- some of the most succulent and delicious dishes in Sardinian cooking.And then there’s the pasta- the peculiar ravioli, filled with cheese, the ricciolini served with a boar sauce, not to mention all the other types of fresh pasta, skilfully prepared by hand in the hotel. Potatoes roasted under the hot embers of a fire, the tasty sebadas with a filling of cheese, sweetened with a drizzle of honey and the delights of ricotta.These are just some examples of the renowned dishes, based on local traditions, which draw compliments and admiration from our guests.The special tastes which characterise our cuisine, the uniqueness of the flavours and the sought-after scents make the Hotel Cualbu a preferred destination for lovers of the art of cooking.
But we shouldn’t forget the sweets, made from almonds and our own honey, the famous biscuits from Fonni and many other delicacies whose flavours we will leave you to imagine while we wait to welcome you as our guests and let you try the rich tastes, accompanied by distinctive wines and local liqueurs and spirits, such as mirto and acquavite.
